1kg potatoes, peeled & chopped
3/4 cup Sanitarium So Good soymilk
125g light cream cheese
1 tsp salt
1/4 cup chopped chives
Topping
4 crushed Sanitarium Weet-Bix
1 Tbsp margarine, melted

1. Place potatoes in a saucepan with water. Bring to boil and then simmer over gentle heat until tender. Drain.
2. Add So Good, cream cheese and salt. Mash well.
3. Stir through chives.
4. Spoon into a lightly greased 18cm ovenproof dish.
5. Combine topping ingredients and sprinkle over potato.
6. Bake in a moderate oven, 180oC, for 25-30 minutes or until heated through and golden brown.
